Nowadays getting more greens and fresh vegetables that is why I like Summer . Experimenting with these greens I love it. Eat more fresh and healthy food in this season . Especially for kids, they need lots of nutrition in this growing age. They do lots of physical and mental work . This dish specially for my little boy who loves to eat tofu in any form . So I do not do every time same recipe of tofu for him , I do experiments with Tofu . But if you don't prefer Tofu you can use here Paneer(Cottage Cheese).
Here's the method
1 Small Broccoli (separate the florets)
10-12 Button Mushrooms (cut into half)
1 Cup of Tofu/Paneer
1/2 cup of Thick Yogurt
1/2 tbsp Cream Cheese
1 tsp Cashew nut paste
2 tsp Coriander Chutney
Salt to taste
Black Pepper
Oil
Marinate the Mushrooms and Broccoli with yogurt, cream cheese, cashew nut paste and coriander chutney for 10-15 min.
When vegetables little cooked add tofu /paneer , salt and pepper. Stir it for some time.
When vegetables leaves oil it is ready to eat.
