Hey friends. How are you today? This is my first post and I am starting it with everybody's favorite lovely white Paneer (or Cottage Cheese). But of course its very lite Paneer dish with some colorful veggies and its good with rice only. Its very healthy recipe so its good for kids also. Hope you'll like this recipe. Here I used homemade Paneer,Eggplant,Zucchini and Green beans along with a mixture of spices.
Here is the recipe-
1 1/2 cups Paneer,cubed
1 Zucchini cut into long pieces
1 Eggplant cut into long pieces
10-12 Green Beans cut halves
1/2 tsp Whole Cumin Seeds
1 1/2 tsp Cumin Powder
1/2 tsp Coriander Powder
2 tsp Ginger paste
4-5 Cardamon
2- Bayleaf
3-4 Dry Red Chillies
2 -Green Chillies
1 tsp Gram Masala (Cinnamon,Cardamon,Cloves)
Salt to taste
1/2 tsp Sugar
1/4 tsp Turmeric Powder
1 cup Milk
Oil
Method-
In a bowl combine ginger paste,cumin powder and coriander powder and turmeric powder with little water and make a paste.
Now in a pan put whole cumin seeds,cardamon,dry red chillies and bay leaf. When cumin seeds splutter add the above paste.
When masala leaves oil add all veggies and stir it well.Now add 1 cup of water, paneer cubes,salt and sugar.After one boil in medium flame add milk, garam masala and bring it to boil until the veggies are cooked.
At the end garnish it with slit green chillies.
**If you want more gravy then you can add more amount of water and milk.
Now its ready to eat with hot rice.
