Palak Paneer Kofta


Ingredients:

For Kofta:

Paneer crumbled or grated

Few crushed dry fruits

Cheese cube grated -1

Salt to taste

Pinch of sugar

All purpose flour ( for binding)

Cornflour for dust


For Spinach gravy:

Chopped onions

Crushed garlic pods

Chopped tomato

Coriander powder

Kasuri methi

Salt to taste

Turmeric 

Sugar( optional)

Cream

Oil


Method:

1. Put spinach in boiling water with little salt cook it for few minutes and immediately remove in cold water to maintain green color.

2. Make a paste of spinach.


3. For kofta

a- Knead paneer well with salt , pinch of sugar, garam masala and all purpose flour ( for binding only).

b- Mix crushed dry fruits and grated cheese together for stuffing in koftas.

c- Make a ball of paneer , stuff with dry fruit mixture, dust with cornflour and fry them in medium hot oil.


4. For gravy -

a- In a pan heat oil , put chopped onion , crushed garlic and chopped tomato. Sauté for few minutes .

b- Add all the dry masalas written in the list. Cook for few minutes .

c- When oil oozes out from masala add spinach paste. Cook for few minutes .

d- Add cream and koftas in gravy and simmer it for few minutes. 

e- Switch off the gas and your dish is ready to serve.

Paneer (Cottage Cheese) with Veggies


Hey friends. How are you today? This is my first post and I am starting it with everybody's favorite lovely white Paneer (or Cottage Cheese). But of course its very lite Paneer dish with some colorful veggies and its good with rice only. Its very  healthy recipe so its good for kids also. Hope you'll like this recipe. Here I used homemade Paneer,Eggplant,Zucchini and Green beans along with a mixture of spices.
