Malpua / Indian Pancake

Malpua is very popular dessert in India . But there are different types of  recipe in different-different places and I don't know that if my recipe  belongs to which place or I can say its my creation . Now Holi  is coming and it is the one of the biggest festival in India . So I decided to share this recipe with you. Ya I know its little time-consuming dish but eventually it will make you happy .The key ingredients in malpua that makes your malpua tasty is the amount of dairy products you used in malpua ,then your malpua will surely make tasty . So friends lets start with the ingredients 



Here's the recipe

1 1/2 cup of Khoya (I used homemade khoya, here I used 1lt of Milk to make khoya)
1 cup Semolina (Suji or Rava)
1/2 cup Chena 
1/2 cup Maida
1 cup Milk (not exact measurment, the milk quantity should be varied according to your batter)
1 tsp Fennel Seeds
Oil/Ghee for shallow fry



For Sugar Syrup:

1 cup Sugar
1 1/2 cup Water
4-5 Cardamom

Method:

First soak semolina with some amount of hot water.

When semolina absorbed all water then add all the ingredients above (except fennel seeds). 

Blend this mixture to make smooth batter and then add fennel seeds. (Note: Your batter should not very liquid or not too dry, just like it leaves your ladle smoothly. If your mixture is too dry then add little more milk)


Now make sugar syrup. Add sugar ,water and little crushed cardamom. Bring it to boil and let it cook for  2-3 minute , so the syrup will little thick.

Set your pan with oil or ghee to shallow fry the malpua.


With the help of your ladle put mixture in your pan when oil is little hot.(Do not overheat your oil otherwise your malpua will break).









After frying on both sides put it in your sugar syrup, just immersed in syrup for 1 minute and put it into another plate.





Now friends I am ready to serve you "toh kuch muuh meetha ho jaye"
