Bengali Veggies Chorchori

This Chorchori is my childhood memory. Mostly Mom used to make this after I came back from the school . Every vegetables dish she used to make healthy as well as tasty. I enjoyed it with hot rice and ghee .




Here's the recipe:

*Here you can use any vegetables. If you have drumsticks then use it because it makes more tasty.  

2 medium size Potatoes (cut into 4-6 pieces without peeled)
1 small Carrot (cut into pieces)
1 Zucchini (cut into pieces)
Bunch of Spinach (Chopped in big size)
2 medium size Brinjal or Eggplant (cut into pieces)
Some florets of Cauliflower and stems
Some Green beans (cut into half)
Few Green Chillies
1/2 tsp Fenugreek seeds
Few dry red chillies
5-6 tsp of Poppy seeds (paste)
2 tsp of ginger paste
Salt to taste
Sugar to taste
Turmeric powder
Oil
Ghee (clarified butter) at last


1. In a wok heat some oil and put fenugreek seeds,dry red chillies ,potatoes and eggplant . Fry it little.


2. Now add all the vegetables except Spinach and salt , sugar n turmeric powder.


3. When vegetables little cook add spinach, poppy seed paste and ginger paste. Cook till the vegetable cook.


4. Now eat with hot rice and ghee.
