Palak Paneer Kofta


Ingredients:

For Kofta:

Paneer crumbled or grated

Few crushed dry fruits

Cheese cube grated -1

Salt to taste

Pinch of sugar

All purpose flour ( for binding)

Cornflour for dust


For Spinach gravy:

Chopped onions

Crushed garlic pods

Chopped tomato

Coriander powder

Kasuri methi

Salt to taste

Turmeric 

Sugar( optional)

Cream

Oil


Method:

1. Put spinach in boiling water with little salt cook it for few minutes and immediately remove in cold water to maintain green color.

2. Make a paste of spinach.


3. For kofta

a- Knead paneer well with salt , pinch of sugar, garam masala and all purpose flour ( for binding only).

b- Mix crushed dry fruits and grated cheese together for stuffing in koftas.

c- Make a ball of paneer , stuff with dry fruit mixture, dust with cornflour and fry them in medium hot oil.


4. For gravy -

a- In a pan heat oil , put chopped onion , crushed garlic and chopped tomato. Sauté for few minutes .

b- Add all the dry masalas written in the list. Cook for few minutes .

c- When oil oozes out from masala add spinach paste. Cook for few minutes .

d- Add cream and koftas in gravy and simmer it for few minutes. 

e- Switch off the gas and your dish is ready to serve.

Pomfret er Jhaal ( Pomfret Fish Curry)


There are so many authentic and mouthwatering recipes Pomfret . But sometimes feels to have some light curry with plain rice. Here is one of the simple recipes of pomfret i.e Pomfret er Jhaal (Pomfret fish curry).

Let us begin with the recipe:


Ingredients:

4-5 Medium size Pomfrets
2 Onion chopped
5-6 cloves of garlic pods chopped
Small piece of ginger
Two big size Tomatoes chopped
Few green chillies
Chopped coriander
Salt to taste
Turmeric
1/2 tsp black cumin(Kalonji)
1 tsp jeera(Cumin) powder
1/2 tsp dhaniya(coriander) powder
Red chilly powder(optional)
Little Sugar(optional) to balance taste
Oil  (I used Mustard oil)

Method:

Clean and wash the fish . Marinate it with salt and turmeric, Keep it aside.
In a big pan Put some oil and heat it.





Now put  black cumin seeds(kalonji) after that add chopped onion ginger and garlic together.'




After few minutes add salt and  spices mentioned in ingredients with little amount of water . When oil oozes out put chopped tomatoes. Wait for a while till the tomatoes cooked.



Put marinated fish in the masala in slow flame and cook one side for few minutes and flip them to another side. After some time add water (consistency according to you) .




After well cooked put few green chillies and chopped coriander.



Serve with piping hot rice.

Salmon Avocado Salad

Salmon is the healthiest with good source of Omega-3 fatty acid fish . Mostly little grilling or saute is the best option for this fish and if we cook more it will become hard, so cook little . In this salad I little saute and flakes the Salmon . Here you can use Chicken instead of Salmon and you can use this mixture of your sandwich also. Okay ,Let's begin our recipe. 



Salmon - 3 Fillets
Boiled Eggs -2
Avocado -1
Walnuts
Almonds
Cranberry
(You can use any other nuts like pumpkin seeds , pistachios etc.)
Olive oil
Salt to taste
Black Pepper powder
Lemon juice

Salmon saute with some salt and pepper and flakes it.
Roughly cut the boiled Eggs and and Avocado.
Crushed the Walnuts and Almonds.
Then mix every ingredients except lemon juice.
At last add lemon juice and garnish it with Coriander.

Coriander yogurt chutney (little Italian style)


Usually I call this chutney "Indian-Italian Pesto" . Here idea is an Indian but execution little Italian way. Hope you will like it. This chutney you can eat in many ways . You can mix it with pasta also and you can call it Indian pesto Pasta or you can use in sandwiches or for marination .  Here I coarsely ground not fully ground. So you can get every bite of ingredients.



Its very easy and simple to make . All measurements according to you:

Coriander leaves
Few Mint leaves (optional)
Garlic cloves
Green chillies
Walnuts
Yogurt
Olive Oil
Lemon juice and
Salt

Coarsely grind everything . Not make too much runny chutney , it should be semi -liquid.
