Malai Kofta

At my home I used to cook kofta once in a week .  Malai Kofta as we know by its name that it is very rich dish and lots of cream is use, but in this recipe I didn't use any cream. Yes that is true my recipe has also many elements to make it rich, but yes as a substitute of cream I used yogurt and milk .
This Malai Kofta I made 4-5 days ago. Actually I didn't have plan to make malai kofta, it just happened when some mawa or khoya left in my kitchen. And I generally use khoya to make Malpua, GulabJamun or some other kind of sweet dish. On that day I was thinking to make GulabJamun , but suddenly my mind strike that why don't I change this jamun to koftas? Then my experiment begun. For binding agent I used bread crumbs instead of flour. But the difference was that I used  less mawa and more chena/grated paneer to make kofta balls. This was my Malai Kofta's journey from Gulab jamun to koftas.




Here's the recipe:

For Kofta balls

 3/4 cup Mawa or khoya
1 1/4 cup Chena/Grated Paneer
1-1/2 tbsp bread crumbs
White Flour for dusting
Few Dry fruits (as your choice)
Salt to taste

For Gravy

1 medium size Onion (chopped)
1 tsp Garlic paste
1/2 tsp Ginger paste
4-5 Cardamom
2 Sticks of Cinnamon
1-2 Cloves
1-2 Bay leaves
2-3 Dry red chilly
Few Strands of Saffron
2-3 tsp Yogurt
5-6 Cashews
1 1/4 Cup Milk
1 Cup Water
Oil
Salt to taste
Sugar(optional)

Method:

For Kofta balls:


Mix all the ingredients (except flour) and make small balls.

Roll this balls in white flour for dusting.




Set a pan with oil and deep fry all the balls in mid flame and keep it aside.






For Gravy:

Make paste of cashews.

In a pan put some oil and add cardamom , cinnamon , cloves, bay-leaves and dry red chilly.



Add chopped onion ,ginger and garlic paste and saute for few minutes (not over-fry and not leave it raw) .



Now add Cashew paste. When masala leaves oil put yogurt.










When masala leaves oil add milk, saffron and water. Now add salt and sugar(optional).Bring it to boil.

 Add kofta balls and let it cook for 2-3 minutes.







Now your Malai kofta is ready to eat.....Enjoy your food.
