Chocolate Gujiya

Wishing you all a very-very happy and prosperous Diwali .

 What do we crave in festivals? Some rich good food and celebrate our joy with variety of sweets. Whenever festivals come we all have an excuse to eat lots of sweets . So on festive seasons no dieting , just we want to eat varieties of homemade or purchased sweets . But I know that Gujiya is very common sweet in every Indian festivals , which is traditionally made by khoya and coconut . But here I did some variation with filling , just some experiment . I hope you would love this little experiment with Gujia .

Chicken Bhurji

I love to cook and eat chicken ,but I don't like to eat the chunky fibrous part of chicken in curry because this part is very chewy not tender . So whenever I buy chicken I separate out the chunky fleshy parts . And in the traditional chicken curry I use only the tender parts . With the chunky parts I try to make variety of dishes . And in this category I cooked Chicken Bhurji . Very easy to cook I just boiled fibrous part of chicken with milk , onion paste and ginger-garlic paste . And mix it with some vegetable and its ready to eat.  Let's start with the recipe.

Crispy Tofu Avocado salad

Sometimes we eat only salad in our dinner ,because it is light and easy to digest at night.This salad was our Friday night dinner. Yes only salad . Because me and my hubby fond of salad . For me Salad preparation is little tough because we've to think more for dressing . I feel good and healthy dressing will make salad more tasty and healthy too .I know that tofu doesn't have its own taste, so to make tasty I shallow fried it . And I made it little spicy too. This is very simple salad . If you eat this salad only in your dinner/lunch then I am sure you won't need anything extra .

Sweet & Spicy Capsicum Potato with Paneer / Prawn / Chicken / Egg White


Happy Rainy Days to all . I love these days . Green in all around , sky is cloudy and the best watch rain from balcony and eat hot Momo with spicy chutney. But rainy days make me little lazy , don't want to wake up early . And in kitchen I want to spend less time . So in less time I made this simple easy dish ,but if you add paneer / prawn /chicken / Egg white with it , it will taste more. Here I used prawns , but if you are using chicken , then use boneless part and chopped it into small pieces . You can use paneer or boiled Egg white also, don't use egg yolk because it will change the taste of your dish . Let's start with the recipe.

Spinach Walnut Kebab

Recently I tried a new experiment with Kebab . Its not any Non-vegetarian kebab, its only Veg and healthy kebab. Healthy because ingredients are Spinach ,Walnut and use very less oil to fry . I always knew that kebabs are mostly non-vegetarian but I was wrong, when I had very good veg kebab in one of the restaurant . That inspired me to make Vegetarian Kebab. I used here good handful of walnut , which is very good for our brain  . My kid doesn't like to eat much healthy food and always like to eat fast foods  like Burger,Chips etc. . And  this Kebab I gave him in the name of Burger . I think this is the common problem for all moms . Only moms can find out the tricks . And this poor mom also find out the way to feed his child healthy and nutritious . So this Kebab is dedicated to all Moms who is struggling like me to feed their children .

Tofu Kofta Curry

Tofu is one of the most significant food items in East Asia and is abundant in supply . But it is difficult to cook according to Indian taste. In Korea Tofu is mostly eaten with Soy Sauce or Kimchi (kind of Korean pickle) . It looks similar to Paneer or Cottage Cheese but tastes a little bland to many Indians. Tofu is considered to be very nutritious and healthy, so it should be part of our regular diet. This point made me experiment with tofu and I came up with a simple Indian version of tofu dish . Hope this recipe makes you welcome tofu in your kitchen too.

Sweet & Sour Tomato Orange Chutney

I was rummaging through my fridge wondering if anything is left from last week's supply , then my eyes got stuck on some lovely cherry tomatoes . I bought a lot of tomatoes but I didn't use very much and didn't want to spoil them . So decided to make chutney that we can have with paratha or with simple rice menu .  In  bengali occasions no meal is complete without chutney . So this is bengali sweet & sour tomato chutney but with some variation .  In this I mixed some oranges and instead of Dates I used dried Figs , the simple reason for using Figs was that I didn't have Dates at home and my baby doesn't like to eat dried Figs , which happens to be very healthy too . So here goes the simple recipe .

Mutter Paneer / Cottage Cheese with Peas

My husband had been craving paneer for last few days . And I had no excuse because weekend was coming . Weekend means something special to eat and enjoy whole day with family and friends . So I decided to cook Mutter Paneer on Sunday night . Generally  I make paneer at home and keep in water to store it .In Mutter Paneer I don't use any onion and garlic . I don't want to say anymore about Mutter Paneer because I know it is one of the most popular dishes in every Indian kitchen . Chewy Almond Macaroon

Ah! I love to bake macaroons because it doesn't take lot of time to prepare. Only four ingredients are needed to make them . One of the major advantage is that it doesn't need butter, it is made only by almond powder. If your guest gives you a surprise visit , then you can handle them by making these macaroons . Just you need to mix and bake it.

Greeny Fruity Nutty Chicken Salad

After Malai Kofta I decided to make something healthy. It's very difficult to eat something heathy because we  are mentally prepared that healthy isn't too tasty. And if we talk about salad then our first reaction would be Oh!Salad . But we can enhance taste of healthy foods by giving some twists . Yes we have to try and think a bit . So we can eat and live healthy. Here I roasted some chicken (I use boneless chicken) with some salt , pepper , dry parsley and some garlic cloves . You can use your marination also . Salad leaves you can get in any supermarket . So friends let's try something healthy and nutritious today.

Malai Kofta

At my home I used to cook kofta once in a week .  Malai Kofta as we know by its name that it is very rich dish and lots of cream is use, but in this recipe I didn't use any cream. Yes that is true my recipe has also many elements to make it rich, but yes as a substitute of cream I used yogurt and milk .
This Malai Kofta I made 4-5 days ago. Actually I didn't have plan to make malai kofta, it just happened when some mawa or khoya left in my kitchen. And I generally use khoya to make Malpua, GulabJamun or some other kind of sweet dish. On that day I was thinking to make GulabJamun , but suddenly my mind strike that why don't I change this jamun to koftas? Then my experiment begun. For binding agent I used bread crumbs instead of flour. But the difference was that I used  less mawa and more chena/grated paneer to make kofta balls. This was my Malai Kofta's journey from Gulab jamun to koftas.

Creamy Corn Broccoli

Broccoli has a many health benefits that we already know. But that after knowing all this good values of broccoli we do not want to eat because of its taste. Am I right? Ya,I was like that only and I didn't like to eat broccoli at all . But in this my husband has a big role, he always forced me to eat it and I was really very irritate with this pushing. So one day I thought a lot about eating Mr. Broccoli and I realized that he is right, after all he was thinking about my health . So then I decided to do experiments with broccoli. Many times instead of cauliflower I used broccoli . So after this my taste buds is develop automatically for broccoli and really now this is my one of the favorite vegetable. Malpua / Indian Pancake

Malpua is very popular dessert in India . But there are different types of  recipe in different-different places and I don't know that if my recipe  belongs to which place or I can say its my creation . Now Holi  is coming and it is the one of the biggest festival in India . So I decided to share this recipe with you. Chena/Paneer Bhurji

I have tried many times to make Paneer bhurji but always I wasn't satisfied . So I decided to make it again and now this time, ya I got the better result. I made it with chena because I didn't have paneer at home, so if you have paneer then you just grate it and make with this.Whenever I don't have any vegetables at my home,then I make this easy and  tasty dish. Instead of chena if you have paneer then grate it and saute it with little oil, I do like this because I think if you little saute the grated panner or chena then all the moisture will go out and your dish will make more tasty.Generally in paneer bhurji doesn't saute the grated paneer, but I do it . If you are very health conscious and you don't want to eat only paneer so you can add very little amount of colorful vegetables. And believe me this will also make your dish very tasty as your simple paneer bhurji. So friends lets try to make this recipe.

Cauliflower and Potato dish in Bengali Style (Chaal Kopi)

I am very foodie. So I tried to make different kind of dishes with different-different type of materials. I love to cook so I do experiments. But this is not my own experiment ,but ya this is bengali vegetarian dish. My today's post is about Cauliflower and Potato dish, Ya I know its very common dish but there is a twist in this recipe. Can you guess it ,what is the twist? hmmm?The answer is- Here with cauliflower and potato I mixed rice also. That's right rice and this is not any kind of pilaf ,so here I added very little quantity of rice. This is only Vegetarian dish or we called in hindi is Sabji,so you can eat it with both chapati and rice.This is bengali dish ,which called in bengal as a Chaal Kopi, and here Chaal means rice and Kopi is cauliflower, which we can eat with rice and chapati also. It was again in one weekend I tried to make this dish because my hubby was at home and he generally loves to eat simple food, in hindi that we call Dal Chawal and Sabji. On that weekend I prepared only rice, masoor dal and the great Chaal Kopi and that was my menu for lunch .You would be thinking only that was for lunch, but believe me this one was the great and simple meal for us that nothing else we needed.
